ככלל, על פי החוק, ביצים הן מוצר רגיש שיש להובילו בקירור ולאפסנו בקירור, ולשווקן לצרכן רק לאחר שמוינו ונחתמו בתחנת מיון מאושרת. ביצים המוחזקות בטמפרטורה שאינה מתאימה, בתנאים שאינם סניטריים או מובלות בתנאי הובלה שאינם עומדים בדרישות השירותים הווטרינריים, מהוות סכנה ממשית לבריאות הציבור! ולכן, אסורות בצריכה.
